A perfect sweet mead

This one, while very sweet was absolutely delicious. This is excellent, extremely present honey flavors from an excellent honey.

Exquisite Representation of Heather

I find heather traditionals are very hard to come by. As far as varietals come, it's a personal favorite. I've only had half a dozen from the States and Europe combined. And this is my favorite so far.
This mead is incredibly well balanced with a gorgeous complexity; herbaceous, pungent summer wildflower, mellow potpourri, earthy, malty, autumn leaves, and so much more. The alcohol is very well muted against the distinct rustic sweetness of the honey and the body has a slightly silky wash over the palate.
While I prefer to sip it slowly by itself, I found it does pair well with dried apricots, orange slices, seasoned apple slices and a Gruyere I had available. An absolute must try, IMO. Cheers!
Tastes like what I had hoped mead would taste like the first time I had it

This mead is why people think of mead as a drink that is likely what the Greek mythological concept if Nectar was based on. The nose is interesting, it’s a little funky and strong, it has floral notes but not as strongly as I was expecting, I think the subtleties of the fermentation and the base ingredient come through really beautifully in the nose. It hits your tongue like pure honey, so sweet it almost wraps back around to bitter or tart. It’s luxuriously thick and syrupy, so it costs your mouth almost immediately, and it almost feels like it’s melting there. Finish brings the heather, a touch of tangy clover greens, and a big hit, strangely, or lemon or citrus that I didn’t expect. All in all, it was exactly what I had hoped for with a few welcome surprises.
