With 400 hives covering 100 square miles of Dumfries & Galloway in Scotland, John Mellis has become known as one of Scotland’s most successful bee farmers, with his honey in great demand for it’s unique flavor. The distinctive flavor of his honey is down to the countryside the hives are positioned in, with trees, wild flowers and heather providing the nectar the bees need. Scottish heather is adapted to the rugged hills and climate of the Scottish highland and lowlands and most prolific "ling" heather grows freely over almost 5 million acres of Scottish lands. The connoisseur's choice made solely from the nectar from Scotland's heather that blooms in August. A distinctive light "smokey" and aromatic flavor places heather honey in a class of its own.

Found amidst warm breezes, thundering ocean waves, tropical flora and fauna and towering volcanoes, feathery red Lehua blossoms decorate the lush Hawaiian countryside as they bloom on the O’hia tree. In Hawaiian lore, this flowering branch is used as an offering to the fire goddess Pele, to pacify her fierce and fiery temperament.

This same blossom, with its quiet power to quell a volcano, is the source of this luxurious honey. With a flavor profile exclusively tropical, our Hawaiian Lehua honey is reminiscent of bananas foster, with hints of guava, mango and a delicate, floral note. Entirely unique in flavor, color and aroma, this honey crystallizes into a creamy texture, making it perfect for spreading.
