The Heart of Darkness is our capstone mead, made from hand-harvested estate fruit grown by the Schramm’s. The cherries are of the Schaarbeek variety, an intensely flavorful, European Morello type. The raspberries are Heritage and Latham, grown in Michigan by the Schramm family for three generations, and the black currants are Crandall and Consort. Production is extremely limited, as the amount of care and labor which go into each batch is substantial. This mead is the finest representation of our core commitments to fidelity and quality of ingredients. It pours a deep purple in color, has a dense fruitiness and a mid-palate with considerable tartness and a lingering, balanced finish. Your empty glass will be redolent of the honey component. The Heart of Darkness pairs well with grilled red meats, high quality dark chocolate, and blue cheeses.

The Icon Reserve PX is truly a masterclass in the art of fruit growing, meadmaking, and barrel-aging. It represents a cumulative 50 years of experience between Ken Schramm and James Naeger, MSc. This extraordinary mead is the direct result of Ken's years of research into cider apple typology, heirloom apple varieties, and his relentless quest to make the best apple mead possible — in concert with James' barrel expertise, precision, timing, and dedication to quality at every level. The apples were hand-harvested, and washed and pressed into cider by Ken and his daughter Sarah.

The unique blend of estate-grown heirloom and modern apple varieties were then carefully transferred by James and Shawn into one of the most aromatically complex bourbon barrels we have ever had the pleasure of working with. The barrel, sourced by James from our friends and neighbors at Valentine Distillery, is an ex-Pedro Ximénez sherry barrel that was used to finish their 10 year Mayor Pingree Bourbon Blue Ribbon. It imparts aromatics of caramel, sweet Sherry, pie crust, and pipe tobacco; all paired with a vibrant acidity. As Ken created balance and complexity between apple varieties and honey in Apple Reserve, so crafted James a delicate balance between fidelity to exceptional apple flavor and aroma with the bold, robust flavor and aromatics possible from the barrel. The end result is a magical mead — aged to create flavors of deeply caramelized apple laced with sweet cream and vanilla. James' fanatical attention to detail, and dedication to quality, make this mead one of our most beloved yet.

Lutowka is a varietal cherry mead made from the tart Polish Lutowka cherries. Its distinctly cherry aroma is immediately recognizable, but this incarnation of The Statement is more focused, brighter, and with a touch more acidity on the palate than our classic Balaton version. Pair with blue cheeses, pork tenderloin, or dry aged red meats.

Madeline 11th Birthday is is the second iteration of our 100% new French oak aged boysenberry mead. The oak for these barrels was aged for five years before being crafted into staves, which were then carefully shaped into 225L Château Tradition barrels, each with a custom toast. This meticulous process has infused the mead with layers of complexity and character, balancing the vibrant fruit notes of the boysenberries with the nuanced depth that only the finest French oak can impart.

Schramm’s Madeline is our boysenberry mead, made with whole boysenberries and orange blossom honey. A cross between European raspberry, common blackberry and American dewberry, the boysenberry has a unique tannic flavor which combines wonderfully with carefully selected premium honey. The resulting mead is thick, jammy and extremely flavorful and pours dark purple with a very smooth, lightly tart finish.

For years now, Madeline has dreamt of opening her own a coffee shop. When you ask Maddy what she wants to be when she grows up, she alternates between a future career as a scientist or a barista. In 2024, Madeline requested a coffee shop for Christmas. We let her know that a brick-and-mortar coffee shop was beyond our capacity at that point, but we did end up purchasing an espresso machine to her surprise and elation.

This release of Madeline, we have agreed to let her fundraise for her current goal: opening her own coffee cart. The Statement Reserve is made exclusively from estate grown Schaarbeek cherries. Like The Heart of Darkness, production and availability of this melomel are extremely limited. It was conceived and crafted to be the purest embodiment of the Schaarbeek cherries and premium honey used in its creation. It is compelling enough to be served without accompaniment, but is without peer when served with Belgian chocolate or New York cheesecake.

Starting an orchard from scratch is a many-year project. Production is miniscule at first, and grows slowly until trees, vines, and bushes reach maturity. Year Five contains nearly the entire fifth year harvest of Schramm’s Orchards fruit – estate grown and handpicked at peak ripeness. This blend contains red, golden, and purple raspberries, red, black, and pink currants, gooseberries, tart cherries, loganberries, peaches, plums, strawberries honeyberries, and wineberries.
