Heartless is comprised of two beloved fruits absent from The Heart of Darkness. The boysenberries contribute heft, depth, floral roundness, and a firm dose of tartness. The strawberries add lush, juicy character and soft flavors of candied red fruit. Their distinct seedy edge is even recognizable. Black Heart is nearly opaque in color, made with black raspberries and premium honey. Drier than most of our melomels, the distinctly acidic, tannic and earthy character of black raspberries make this mead a prime candidate for pairings with sharp cheeses, creamy desserts and well-marbled, dry rubbed meats. This mead will age well for many years.
Valentine marries the focused acidity and crisp flavor of whole red raspberries with the unmistakably deep and rich aromatics of black currants. A combination of two of our most popular flavors, we are certainly sweet on Valentine. Pair with Duck confit, steak tartare, and someone you love.
